Pancakes

With pancake day coming up I thought I would share this recipe to make crepe like pancakes. They are the traditional kind we have for pancake day. I've had this recipe hidden away in the notes section of my phone and it isn't helping anyone make amazing pancakes there.

These are really easy to make. Once you have made up your mixture you cook them the same way you would any other pancake.

Equipment:

  • Mixing bowl
  • Whisk
  • Frying pan

Prep Time: 5 mins Cook Time: 4 mins Total Time: 9 mins
Ingredients
  • 1 cup plain flour
  • 1 1/2 cup oat milk (or other milk alternative)
  • 3 tbsp olive oil (and extra for frying)
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup water
Instructions
  1. In a large mixing bowl whisk together the flour, oil, maple syrup, vanilla extract and oat milk
  2. Slowly pour in the water while whisking the mixture to thin the mixture as needed.
  3. Place your frying pan on a medium heat. Once warmed add in a tablespoon of oil.
  4. Spoon some batter into the pan. Move the pan side to side to spread the mixture round. Cook for a couple of minutes. When you gentle shake the pan if the pancake moves freely flip it and cook for a minute on the other side.
  5. Serve immediately and enjoy with your choice of toppings.
